2 ounces white rum 1-1/2 ounces pineapple juice 1 ounce blue curaçao 1 ounce canned coconut cream or canned coconut milk 1/4 ounce simple syrup, plus more for rimming glass Shredded unsweetened coconut, finely chopped
Combine simple syrup, rum, pineapple juice, blue curacao, and coconut cream in a cocktail shaker that is only partially filled with ice.
Secure the cocktail shaker lid and shake vigorously for 20 seconds until cocktail is chilled.
After dipping the rim of a rocks tumbler in simple syrup, garnish with coconut shreds.
Add ice to the rocks glass.
Serve the cocktail in the prepared vessel after straining it.
