SPINACH AND ARTICHOKE TAQUITOS RECIPE

1/2 cup sour cream ▢1/2 cup mayonnaise ▢8 oz cream cheese softened ▢1 cup grated parmesan cheese ▢1 tsp minced garlic ▢1 cup spinach frozen, thawed and drained ▢8 oz artichoke hearts drained and chopped ▢1 cup mozzarella cheese ▢24 corn tortillas ▢vegetable oil for frying

Ingredients

Step - 1

Smoothly combine sour cream, mayonnaise, cream cheese, Parmesan, and garlic. Add spinach, artichoke centers, and mozzarella cheese to the mixture.  

Heat ½" oil in a sauce pan on medium heat.

Step - 2

After the oil reaches the desired temperature (by placing your hand over the pan and feeling the heat), proceed to prepare the taquitos.   

Step - 3

Spread a few tablespoons of the spinach-cheese mixture in the center of each tortilla. Using tongs, roll up and place seam side down in oil. Cook on both sides, or until golden brown.  

Step - 4

Continue in this manner until every tortilla is stuffed, folded, and fried. Drain using paper towels. Warmly serve and ENJOY!
